We work with ancient Sicilian grains like:
• Russello – warm and toasted, like caramel • Tumminia – dark, bold, with vibes of chocolate and carob • Stone-ground flours – rich, rustic, loaded with character
Every dough is alive—and like all living things, it changes.Fermented with natural lactobacilli, our doughs develop intricate aromas and deliver exceptional lightness—easy to digest, without heaviness.
We carefully source every ingredient: The stracciatella is real. The red shrimp is hand-cut on the spot. The tomatoes are the right ones, cheeses come from small producers, and every vegetable is prepared in-house, by hand.
